A RECIPE WORTH TRYING
One of my absolute favourite treats is anything chocolate with nuts. Peanuts, almonds, pistachios, cashews…I don't discriminate.
So, it will come as no surprise that I love a snickers bar straight from the freezer. Well, I must tell you when I first saw these I wasn’t sure if it was just another semi healthier version of something that should be left alone. But our whole family can tell you these are as good if not better than any old snickers bar. Which is high praise considering I live with coffee crisp + Kit Kat lovers.
We certainly can’t take credit for the original recipe, but I can assure you it’s worth sharing far + wide. We made a few modifications such as using semi sweet or a darker chocolate, we only have crunchy peanut butter so that’s what we used, but any would work + we use butter in our melted chocolate because butter is our favourite ingredient over here.
What you'll need.
Ingredients:
- Medjool dates
- Crunchy peanut butter
- Semisweet chocolate
- Butter
- Chopped salted peanuts
Directions:
Cut a slit in your date, squeeze ends to remove the pit
Taking a small spoon, fill the dates with as much or as little peanut butter as you would like
(I would recommend a lot, you want some pb in every bite)
Chop your peanuts into small little bits
Place your chocolate in a small microwave safe bowl + top with your butter
Setting your microwave for 30 seconds at a time (chocolate burns easily) start the melting process
Stir after each 30 seconds
Use as much time as your microwave requires to have smooth silky chocolate
Using a spoon, add one stuffed date at a time to your chocolate, rolling it around quickly as to not melt your peanut butter stuffing
Once thoroughly coated remove from your chocolate + top with peanuts
Place on a parchment paper lined plate
Continue with the rest of your dates
Place in a freezer until “frozen”
